Bottle gourd (lauki) is commonly used in savory dishes, but the kalakand made from it is a unique and delightful option for dessert lovers. This sweet dish is low in calories and packed with essential nutrients, making it a popular choice among health-conscious individuals.
Bottle gourd contains a high amount of water, which helps keep the body hydrated. It is rich in fiber, potassium, calcium, vitamins, and antioxidants. As a result, it is considered beneficial for improving digestion, cooling the body, and providing sustained energy.
Lauki Kalakand can be particularly beneficial for digestive health. Its fiber content helps relieve issues such as constipation, gas, and acidity. How to Make Lauki Kalakand
Making Lauki Kalakand at home is simple and easy.
First, wash and peel a fresh bottle gourd, remove the seeds, and grate it finely. Heat two tablespoons of ghee in a pan and add the grated bottle gourd. Cook it over medium heat for about 10–15 minutes. Then add sugar according to your taste and continue cooking until the moisture evaporates.
Next, add khoya (mawa) or milk powder along with a little more ghee. Stir continuously and cook until the mixture becomes thick and grainy. Finally, add cardamom powder and mix well.
Spread the prepared mixture evenly on a tray or plate and allow it to cool completely. Once set, cut it into pieces of your desired shape. Garnish with chopped almonds, pistachios, or grated coconut before serving.
